- 3 1/2 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 1 tsp baking soda
- 2 cups mashed ripe bananas
- 2 TB lemon juice
- 3/4 cup shortening
- 1 1/2 cup sugar
- 3 eggs
- 3/4 cups milk
- 1/2 cup walnuts
Mix dry ingredients. Mix bananas with lemon juice in a separate bowl and set aside. Cream together shortening and sugars. Add eggs and beat until light and fluffy (about 4 minutes). add dry ingredients alternately with milk. Fold in bananas and nuts. Bake at 350 for 45 minutes for small loaves or 1 hour for 1 large and 3 small loaves.

i don't think i've met a banana bread i don't like, but i have a few recipes...i'd like to do a banana bread bake off or taste test to see which one i like the very best. anyone else?
A banana bread bake off would be so much fun!
maybe tina needs an idea for august? if not, september is open. when we did a chocolate chip cookie bake off it was a big success.
this dough was much thinner than normal for banana breads i've made, but i expect them to turn out good since i already tasted rachel's.
and i think rachel was eating the dough, but didn't want to admit it. ;) i got two large loaves and three small. of course, i always have to add other stuff in: chocolate or peanut butter chips, coconut, nuts if they aren't called for. does anyone have any other add in ideas?
